The Gluten Culprit?
For almost a year now, I’ve been wondering whether I might have a gluten sensitivity. I’ll occasionally have belly pain and bloating after eating a wheat-containing snack mix or pretzels. And sometimes I wonder whether we naturally gravitate towards foods that suit our needs (although, strangely, I don’t think my body NEEDS all the chocolate I eat). And I naturally gravitate towards corn products over flour products. Chips and salsa is the one meal that I know won’t hurt my belly (and it’s conspicuously gluten-free). Anyway, I wasn’t thinking about any of this when we made this DELICIOUS whole wheat veggie pizza with kalamatas, sundried tomatoes, pine nuts, and basil. But then, of course, a few hours later I had the all-too-familiar stomach pangs. If a patient complained of these symptoms I would tell them to keep a food diary…Maybe I should take my own advice?
